4. Iron
In order to make sure that you are eating a healthy diet while not eating meat it is important to make sure that you are eating a variety of foods. In order to meet daily requirements for iron intake, you will need to make sure that you are not only eating foods that are high in iron such as dark leafy green vegetables such as chard, spinach, and kale but that you are also consuming foods that are high in vitamin C.
Foods that are high in vitamin C include many fruits, tomatoes, and peppers. The reason for this is because increasing your vitamin C intake will help to improve the absorption of iron. Non-vegetarians will often get the iron that they need from the meat that they are consuming. If you are choosing to not eat animal products it is important to make sure that your diet is full of healthy foods.
